Ingredients for "Baked Potato Skins"

4 baked potatoes, cooled
4 oz cream cheese
1/4 cup bacon bit
3/4 cup cheddar cheese, shredded
1 tsp red pepper flakes

Method of cooking "Baked Potato Skins"

Preheat oven to 400 degrees F.
Cut potatoes into quarters lengthwise, scoop out center leaving 1/2 inch of flesh, and reserve scooped out portions for another use.
Combine cheddar, cream cheese, bacon bits and pepper flakes until blended. Mixture should be thick.
Press onto each skin.
Bake for 15 min, switch to broil and toast tops for 3 min more or until lightly browned.
