Plain yoghurt - ½ kg
Sugar - 300 gm
Cardamom powder - ½ teaspoon
Saffron - few twigs
Pistachio and Almon - ½ Tablespoon, crushed

Method for making Srikhand
|
|
Place yoghurt on a clean muslin cloth and tie the edges tightly. Leave it overnight (6 to 7 hours). Take the yoghurt into a bowl, add sugar and mix. Leave aside for 25-30 minutes and allow the sugar to dissolve. Dissolve saffron into 1 Tablespoon milk and leave aside. Beat well till sugar gets fully dissolved into yoghurt. Pass yoghurt through a wide mesh strainer, pressing with a spatula. Mix in cardamom powder, dissolved saffron and nuts. Pour into a serving bowl. Top with remaining crushed nuts. Chill for 1 to 2 hours before serving.
