Cashew nuts - 150 gm
Sugar - 400 gm
Cardamom - 0.5 teaspoon, ground
Khoya - 500 gm
Silver foil - as needed, optional

Method for making Kaju Barfi
|
|
Dry grind the cashew. Mix khoya (grated) and sugar. Heat the khoya-sugar mixture in a heavy pan, stirring continuously. Once the sugar dissolves, add the cashew (ground) and elaichi. Stir constantly till soft lump is formed that does not stick to the pan surface. Roll on a flat surface to desired thickness and apply silver foil. Make square pieces out of it.
