Gajar Ka Halwa

Ingredients for Gajar Ka Halwa   (Click here for measurement conversion)

Carrots - 1 kg

Milk - 1.5 litre

Sugar - 400 to 500 gm

Cardamom powder - 1 teaspoon

Saffron - few twigs

Ghee or Butter - 1 Tablespoon

Almond or Pistachio - few, chopped, for decoration

Method for making Gajar Ka Halwa

Peel and grate carrots. Put milk and carrots in a heavy saucepan. Boil till thick, stirring occassionally. Once it starts thickening, stir continuously. Add sugar and cook further till the paste thickens. Add ghee, elaichi, and saffron. Stir on low heat till the mixture collects in a soft ball or the fat oozes out. Serve hot, decorated with a chopped almond or pista.
