3 Onions, chopped

4 Green bell Peppers, chopped

4 Tomatoes, peeled and chopped

1 lb Yellow Squash, chopped

2 Potatoes, cubed

5 Tablespoon Olive Oil

2 Garlic Cloves, minced

2 Tablespoon chopped Parsley

1 1/2 teaspoon Salt

Method for making Spanish Vegetable Stew With Squash

Heat oil and saute onions for a few minutes. Add remaining ingredients and a little water. Cover and simmer for 40 minutes, stirring occasionally.
