Beef Fillet Steaks – 4, each 175 gm
Salt – to taste
Pepper – to taste
Wholegrain Mustard - 4 teaspoons
Black Olive Paste - 4 teaspoons
Mushrooms – 4, large and flat

Method for making Mustard Fillet Steaks
|
|
Preheat the oven to 230 deg C (450 deg F) or Gas mark 8. Score the steaks in a cross pattern at 1cm intervals. They should be cut through a depth of less than half the thickness. Mix mustard and olive paste and spread over the meat. Try to fill in the cuts with mustard and olive paste as well. Place the steaks, mustard side down, on a foil lined baking tray. Grill for about 3 minutes on one side only. Put the mushrooms, flat side up, on the baking tray. Turn the steaks over and carefully place on top of the mushrooms. Bake the steaks in the oven for 10 minutes or until the mushrooms are fully cooked. If you want the steaks well done, cook for further 4-5. Serve immediately.
