Pine Nuts - 100 gm
Egg Yolks - 2
Vegetable Stock - 300 ml
Single Cream - 240 ml
Cayenne Pepper - 1 pinch
Nutmeg - 1 pinch
Salt - to taste
Powdered Saffron - 1 pinch
Black pepper - to taste

Method for making Spiced Pine Nut Soup
|
|
Place the pine nuts, egg yolks and half the chicken stock in a food processor. Process to a smooth puree. Transfer to a saucepan and add the spices, cream and the remainder of the stock. Heat gently over medium heat, stirring constantly until uniformly heated through. Do not boil. Season to taste with salt and pepper. Serve immediately.
