Cornmeal Raisin Scones


Features of Cornmeal Raisin Scones

Served as breakfast. Vegetarian dish.

Ingredients for Cornmeal Raisin Scones   (Click here for measurement conversion)

2/3 cup All-purpose Flour

1/4 cup Yellow Cornmeal

3 Tablespoon Sugar

1 teaspoon Baking Powder

1/4 teaspoon Baking Soda

1/8 teaspoon Salt

1 Tablespoon Chilled stick Margarine, cut into small pieces

2 teaspoon Golden Raisins

1/3 cup Low-fat Buttermilk

1 Egg, lightly beaten

Vegetable Cooking Spray

Method for making Cornmeal Raisin Scones

Combine the first 6 ingredients in a bowl, and cut in margarine with a pastry blender or 2 knives until mixture resembles fine meal. Add the raisins, and toss well. Combine buttermilk and egg, and add to dry ingredients, stirring just until dry ingredients are moistened (dough will be sticky). Spoon dough evenly into 5 mounds on a baking sheet coated with cooking spray. Bake at 375 degrees F. for a 18 minutes or until golden. Serve warm.
