1 Tablespoon Olive Oil
1/2 cup minced Onions
1 Tablespoon minced fresh Ginger
1 cup Apricot preserves
1/2 cup Dark Rum
1/2 cup prepared Barbecue Sauce
1/4 cup fresh Lime Juice
1/2 teaspoon Red Pepper Flakes
Method of cooking "Apricot Rum BBQ Sauce"
Over medium-high heat, saute minced onion and ginger in 1 tablespoon olive oil in a saucepan until soft, about 5 minutes. Add rest of ingredients and bring to a boil. Reduce heat and simmer 20 minutes or until thickened.
