Avocado Veggie Tacos


Features of Avocado Veggie Tacos

Served as main course. Vegetarian dish. Speciality: Low Cholesterol, Low Sat. Fat, Low Calorie diet.

Ingredients for Avocado Veggie Tacos   (Click here for measurement conversion)

1 medium Avocado

Nonstick Cooking Spray (as needed)

1 1/4 cups Onions, julienned

1 1/2 cups sweet Green Peppers, julienned

1 1/2 cups sweet red Peppers, julienned

1 cup Cilantro

1 1/2 cups fresh Salsa

12 8-inch Flour Tortillas


Fresh Tomato Salsa

1 cup fresh Tomatoes, diced

1/3 cup Onions, diced

1/2 Clove Garlic, minced

1/3 teaspoon Jalapeno Peppers, minced

2 teaspoons Cilantro, minced

1 pinch Cumin

1 1/2 teaspoons fresh Lime Juice

Method for making Avocado Veggie Tacos

Prepare salsa in advance by combining all ingredients. Refrigerate. Spray skillet with non-stick cooking spray. Lightly saute the onion and green and red peppers. Mince cilantro, avocado slices. Put 2 large spoon fulls on tortilla’s. Fold over and serve.
