Ingredients for Italian Penne Salad with Turkey Sausage & Gorgonzola   (Click here for measurement conversion)

2 cups Penne Pasta, cooked and chilled

2 Turkey Sausages, thinly sliced

1 medium Zucchini, quartered lengthwise and cut into 0.5 inch pieces

2 green Onions, sliced

1 cup small Tomatoes, cut in halves

1/3 cup crumbled Gorgonzola Cheese

0.5 cup bottled Italian dressing

8 cups baby Spinach leaves

0.25 cup Pine nuts or Walnuts, toasted

Method for making Italian Penne Salad with Turkey Sausage & Gorgonzola

In large bowl, combine all ingredients except spinach and pine nuts, cover and refrigerate for 1 to 8 hours. Arrange 2 cups spinach leaves on each of the four plates. Spoon 1 cups of pasta mixture over spinach; sprinkle with 1 Tablespoon of pine nuts.
