Crust
1/4 lb unsalted Butter
1 cup Graham Cracker Crumbs
3/4 cup Sugar
Filling
1 1/4 cups shredded Coconut
4 Eggs
1 1/4 cups Sugar
1 quart Heavy Cream
1/2 ounce unflavored Gelatin (about 2 T.)
4 ounces Amaretto Liqueur
1 dash Almond Extract
Garnish
1 cup Heavy Cream
10-12 Strawberries
4 Tablespoons confectioners Sugar

Method for making Amaretto Coconut Cream Pie
|
|
For crust: Melt butter and add crumbs and sugar. Mix until well blended. Press on the bottom of a 10 X 2 1/2 inch deep springform pan. Filling: Toast coconut flakes until golden brown. Combine coconut (reserve a small amount for garnish), eggs,and sugar and mix at medium speed in mixer until fluffy. Beat heavy cream until soft peaks form. Disolve gelatin in amaretto,then mix in almond extract and egg mixture. Fold whipped cream into blended ingredients. Pour mixture over crust in springform pan and chill at least four hours. Loosen sides before serving and sprinkle with reserved coconut. Whip remaining cream with sugar. Garnish each slice with a dollop of whipped cream and a strawberry.
