Apricot Fritters


Features of Apricot Fritters

Served as dessert. Vegetarian dish.

Ingredients for Apricot Fritters   (Click here for measurement conversion)

1 can unpeeled Apricot halves (29 oz.), thoroughly drained

1 Egg

2/3 cup Milk

1 Tablespoon Crisco, melted

1 cup all-purpose Flour

2 Tablespoon Sugar

1/4 teaspoon Salt

1 teaspoon Baking Powder

Confectioners Sugar

Crisco (for deep frying)

Method for making Apricot Fritters

Dry apricot halves on paper towels until dry. Beat egg with milk; stir in melted Crisco. Combine flour, sugar, baking powder and salt. Add to egg mixture and stir until mixed. Dip apricots in batter; fry a few at a time, in deep Crisco heated to 365 degrees F. until fritters are brown, about 4 minutes, turning once. Do not use the frying basket. Drain on paper towels. Roll in confectioners sugar. Serve warm.
