Features of Soba Noodle Cucumber

Served as main course. Vegetarian dish.

Ingredients for Soba Noodle Cucumber (Click here for measurement conversion)

1 Peeled, seedless Cucumber, Julienned

1/4 lb Blanched/refreshed Soba Noodles

2 Tablespoon Finely sliced Scallions, green only

Salt

Pepper to taste

1 Box Daikon Sprouts

Method for making Soba Noodle Cucumber

Toss above with vinaigrette. Place mound in center of plate. Surround with thin sliced of Ahi. Drizzle vinaigrette and chili oil on plate. Garnish with Daikon sprouts.
