2 1/2 cup Flour
2/3 cup Sugar
1 teaspoon Baking Soda
3/4 teaspoon Cinnamon
1/2 teaspoon Salt
2 cup fresh Strawberries, sliced
1 cup Buttermilk
1 1/4 teaspoon Vanilla
1/3 cup melted Margarine
1 Egg, lightly beaten
1 Egg, white lightly beaten
Method of cooking "Strawberry Muffins (1)"
Combine flour and next 4 ingredients in a large bowl. Stir well. Add fresh strawberries and stir well. Make a well in center of mixture. Combine buttermilk and next 4 ingredients, stir well. Add to dry ingredients, stirring just until moistened. Divide batter evenly among 18 muffins cups coated with cooking spray. Sprinkle sugar evenly over top. Bake 350 degree F for 25 minutes or until wooden pick inserted in center comes out clean. Remove from pans immediately; let cool on wire rack.
