1 Medium Apple, peeled and cored
1 Egg
1 Slice Bread, cut in pieces
1/8 teaspoon Vanilla extract
1 Teblespoon Water
Artificial Sweetener
4 teaspoon Sugar
1 Dash Cinnamon

Method for making Apple Breakfast Fritters
|
|
Grate apple and set aside. Combine all ingredients except apple, in blender. Blend until mixture is smooth. Fold in grated apple; mix well. Drop by tablespoons onto a hot nonstick skillet, or pour out 1 enormous fritter. Cook on both sides to a golden brown. Makes 1 serving. Counts as 1 bread, 1 egg, 1 fruit. Variations:- Blueberry Pancakes: Omit apple. Fold 1/2 cup crushed blueberries into blended egg-bread mixture. Bake as stated. Pineapple Fritters: Omit apple. Fold 2 slices of canned pineapple cut into very small pieces into blended egg-bread mixture. Bake as stated. Pineapple Fritters were my favorite.
