4 x 4 oz fillets of Catfish
2 cups Buttermilk
1 cup Yellow Cornmeal
0.5 Tablespoon Onion Salt
1 Tablespoon Steak Seasoning
0.25 cup Vegetable Oil

Method for making Choctaw Catfish
|
|
In a medium bowl place catfish fillets in buttermilk. Cover and marinate in the refrigerator for 45 minutes. In a re-sealable plastic bag mix cornmeal, onion salt, and steak seasoning. Drain catfish fillets one at a time and place in the bag to coat with the cornmeal mixture. Heat oil in a large, heavy skillet over medium heat. Fry each fillet for 7-10 minutes on each side, or until exterior is lightly browned and flesh is tender (check with a fork). Drain on paper towels.
