Quiche Ole

Served as main course. Vegetarian dish.

Quiche

2 Cup shredded sharp Cheddar Cheese

1/4 Cup Flour

4 Eggs, slightly beaten

1 1/2 Cup Milk

1/2 teaspoon Salt

1 Dash Cayenne

1 unbaked pastry Shell (9-inch)


Spanish Sauce

1/2 Cup chopped Green Pepper

1/2 Cup Celery slices

1/2 Cup Onion, chopped

1 Cup Cats-up or Chili Sauce

Method for making Quiche Ole

Quiche: Toss cheese with flour. Add eggs, milk and seasonings and mix well. Pour into pastry shell and bake at 350 degrees for 1 hour or until set. Cut into wedges and top with Spanish Sauce. Sauce: Heat vegetables in cats-up until crisp-tender.

Serves: 4-6

Yields: 1 1/2 cups
