For Agar Agar:- Put Agar Agar, water and sugar in a pot. Mix well and bring to a boil. Once it reaches boiling point, lower heat and simmer for about 15 minutes till the mixture is somewhat clear. Add colouring and stir well. Put into a moil and set in the fridge. When it is set, grate it finely. For Syrup:- Put sugar, pandan leaves or pandan essence and water into a pot. Bring to a boil and lower heat. Simmer for another 15 minutes until sugar has melted and the syrup has thickened slightly. Put into a tall glass some grated Agar Agar, Syrup, lime juice and top up with ice cubes and ice water.
