1 (3-4 lb) whole Chicken cut in half
16 oz Garlic Cloves
1 can Chipotle Peppers in Adobo Sauce
6 oz Vegetable Oil
10 oz Soy Sauce
1 Tablespoon Black Pepper

Method for making Chipotle Marinated Chicken
|
|
Preheat oven to 350 degrees F. Roast garlic for 10 minutes in oven until browned. Puree garlic, peppers, oil, soy sauce and pepper in blender. Place in a covered container and refrigerate. Marinade will keep for 2 weeks. Place chicken in a 2 gallon sea-lable bag. Pour marinade over chicken, turning to coat. Marinate for 6 hours or overnight. Remove chicken from bag and place in a baking pan. Place chicken in a 350 degree preheated oven and bake uncovered for 1 hour or until a meat thermometer registers 170 degrees to 180 degrees. Let stand for 10 minutes before carving.
