1/3 cup Butter, softened
1 cup granulated Sugar
3 Eggs
2 teaspoons Vanilla
1/4 cup unsweetened Applesauce
3 1/2 cups All-purpose Flour
1 Tablespoon Baking Powder
2 teaspoons ground Cinnamon
1 teaspoon Baking Soda
1 teaspoon ground Ginger
1/2 teaspoon Salt
1/2 teaspoon ground Nutmeg
1 1/4 cups Milk
2 large Apples, peeled, cored and chopped
Glaze (optional)
2/3 cup Icing Sugar
1 Tablespoon Lemon Juice

Preheat the oven to 350 degrees F. Line a 9" x 13" baking pan with foil and lightly grease. In a bowl and using an electric mixer, beat the butter with the sugar. Beat in the eggs one at a time, then add the vanilla and applesauce. In a separate bowl, combine the flour, baking powder, cinnamon, baking soda, ginger, salt and nutmeg. Stir into the egg mixture alternately with the milk. Stir in the apples. Pour into the prepared pan. Bake for 35 to 40 minutes or until a tester inserted in the center comes out clean. Let cool in the pan on a rack for 15 minutes. Invert the pan and turn out the cake; remove the foil from the bottom. Turn right side up on the rack and let cool completely. To make the glaze, whisk the icing sugar with the lemon juice in a small bowl until smooth. Using a fork, drizzle the glaze over the cake.
